By the 2nd century AD, Ostia had become a hub of grain storage and bread production, its bakeries (pistrina) operating day and night to meet the enormous demand for food in Rome, a city of over a million people.

Every dawn, the Pistores of Ostia would ignite their ovens, kneading flour imported from Egypt and North Africa into countless loaves of bread. Their work was not only about feeding the citizens of Ostia; it extended far beyond. Massive shipments of bread left the port daily, destined for the Roman capital—fueling its markets, temples, and legions.

Among their most valued tasks was producing special bread for seamen and soldiers, crafted to last through long voyages or campaigns along the Mediterranean coast. This hard, durable bread, essential for military expeditions, symbolized the Pistores’ direct contribution to the empire’s strength and expansion.

As the Roman Empire continued to grow, so did the importance of these Ostian bakeries. Their laboratories evolved into complex production centers, equipped with large millstones, ovens, and storage facilities—all powered by slaves, animals, and later, watermills. Archaeological remains in Ostia still reveal the scale and sophistication of their work: circular bakeries with vast grinding rooms and ovens big enough to feed an army.

The Pistores of Ostia were more than mere tradesmen—they were the silent sustainers of empire, turning grain into the daily bread that nourished Rome’s people, its soldiers, and its ambitions.
